Ingredients

  • 3 cups all-purpose flour
  • 5 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 3 cups granulated sugar
  • 1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
  • 4 eggs
  • 1 cup vegetable oil
  • 1/2 cup orange juice
  • 1 cup fresh or frozen cranberries

Steps

  1. Preheat your oven to 350˚F.
  2. Using either butter or a no-stick spray, grease two 9 x 5 inch bread pans.
  3. Coat the sides of the pans with flour
  4. Pour the flour, pumpkin pie spice, salt, and baking soda into a large bowl. Set aside for later use.
  5. Take the eggs, sugar, pumpkin, veggie oil, and orange juice and put them into a mixing bowl. Using an electric or hand mixer, beat the mixture until it is just blended (this should take between two and three minutes)
  6. Pour the ingredients from step 4 into the mixing bowl and stir until the two mixtures are evenly combined.
  7. Fold in the cranberries
  8. Put in the oven and bake for an hour to an hour and five minutes, or until a toothpick stuck in the center comes out clean.
  9. Cool for at least ten minutes before eating

Tips

  • Chopped nuts, chocolate chips, raisins, cherries, etc. can be used in addition to or instead of the cranberries
  • Any brand of pumpkin puree can be used, so long as it is free of added spices.
