This recipe is very wholesome, tasty and more-ish. If you want to have a wheat-free bread, consider using spelt in place of regular wholemeal flour.
This recipe makes 2 loaves.

Ingredients

  • 2 cups rolled oats
  • 2 cups boiling water
  • 1 tsp yeast
  • 1/4 cup warm water
  • 1 tsp honey
  • 1 tbsp cold pressed oil
  • 4 1/2 cups wholemeal flour
  • 1/2 cup soy flour
  • 3/4 cup sunflower seeds
  • 1/2 tsp salt
  • Approx. 3-4 cups warm water
  • Additional sunflower seeds for sprinkling.

Steps

  1. Pour the boiling water over the oats. Set aside to soften for one hour.
  2. Dissolve the yeast in the first lot of warm water and add the honey. Mix together.
  3. Mix in the remaining ingredients, including the oats. Stir well using your hands over a few minutes.
  4. Grease two loaf tins. Divide the dough in half and place each half in a separate tin.
  5. Cover with a damp, clean tea towel and leave to rise in a warm place. Leave until the bread nears the top of the tins, leaving a rounded shape.
  6. Sprinkle with some extra sunflower seeds if wished.
  7. Place in a preheated even at 200ºC/400ºF for 50 minutes to an hour.
  8. Remove from the oven once cooked. Take out of the tins immediately and leave to cool on cooling racks.
