Ingredients

  • 3 ¼ Cups Flour
  • 1 Cup Warm Water
  • 1 Tablespoon Olive Oil
  • 1 Envelope Yeast
  • 1 Teaspoon Honey
  • 1 Teaspoon Salt

Steps

  1. Preheat the oven to 500 F.
  2. Combine 1/4 cup of the flour, the water, yeast, and salt in a large bowl. Mix until well combined.
  3. Gradually add the remaining flour. Mix well between additions.
  4. Add the oil and honey. You should be left with a very stiff dough. If it is too stiff, add a few drops of water, if it is too sticky, sprinkle on a little bit of flour.
  5. Knead the dough. In about 10 minutes, you should have a stiff, firm ball of dough.
  6. Add a few drops of oil to a clean mixing bowl, and spread it all over the sides. Add the dough ball. Move it around so the entire surface of the dough is coated in oil.
  7. Cover the bowl tightly with plastic wrap. Allow the dough to rise, until doubled in size, this takes about 2 hours, depending on the room temperature.
  8. Knead the dough a second time, for just a few minutes. Separate into balls, whatever size you'd like the finished flatbreads to be, and roll them out into very thin circles
  9. Spread the dough circles onto an ungreased baking sheet. Leave at least an inch between them so they can bake evenly.
  10. Bake for about 3 minutes, or until the bread is nicely browned.

Tips

  • Use the 'window pane' test when rolling out the lavash dough. Hold the dough up to a light, you should be able to see the light through the dough if it is rolled out thin enough.
  • Make a Persian style pizza with a lavash cracker, with cheese, spinach, tomatoes, and olive oil.
  • Use lavash as a tortilla, fill it with whatever you like and make a hot or cold sandwich.
  • Break it into chunks, and use them as a healthy substitute for potato chips with your favorite dip.
  • Lavash can be served fresh, in place of rice in meals.
  • Although lavash isn't a complicated recipe, it offers endless possibilities. Try adding fresh herbs, or dried spices, or cheeses and meats, before baking. Or sprinkle with sesame, or poppy seeds just before baking. You can achieve many different flavors by adding things you like.
