Ingredients

Filling:
  • 400 grams of mortadella
  • 400 grams of Mozzarella cheese
  • 2 medium onions
  • A glass of green olives
  • A pinch of salt
  • A pinch of oregano
  • Some extra – virgin olive oil
Dough:
  • 1 cup of warm milk
  • 1 egg
  • Salt (a coffee spoon)
  • Sugar (a tablespoon)
  • Flour (enough)
  • 1 cup of oil
  • 30 grams of brewer’s yeast

Steps

  1. First of all, go to the market and buy all the ingredients you are going to need.
  2. Mix all the dough ingredients. First, put the warm milk and the brewer’s yeast in a big bowl, melting the yeast. Then put the other ingredients and mix them using a wood spoon.
  3. Begin to knead the dough hardly with your hands until it is not sticking in your hands. Let the dough rest for a while. Use this time to prepare the filling.
  4. Slice the onions and cut the green olives in small pieces.
  5. Put the green olives and the onions in a bowl and add salt, oregano and some extra-virgin olive oil.
  6. Open the dough carefully, using a rolling pin in a round shape.
  7. Put the filling in this order: first the mortadella then the mixture of onions and green olives and finally the mozzarella cheese.
  8. Roll the dough and put it in a medium rectangular pan.
  9. Make a mixed of one yolk and some coffee in a cup and pass it using a brush in the bottom of the bread.
  10. Turn on the oven in a highest temperature for 10 minutes.
  11. Put the bread into the oven and change the temperature to medium, around 180 – 210 degrees for 20 minutes.
  12. The bread is ready when the dough surface is light brown.
  13. Put away the bread after 10 minutes you had turned off the oven and serve.

Tips

  • Mortadella and Mozzarella cheese should be cut in thin slices.
  • You should boil the sliced onions in order to remove the spice taste that onions usually have.
  • With this recipe you can do 3 medium breads.

Warnings

  • Watch out the oven. Don’t remove the bread from the oven, right after you turned off the oven. Wait 10 minutes at least.
